Garden Fresh Vegetable Soup

INGREDIENTS

 

Half tsp basil (tulsi leaves)

¼ tsp oregano(ajwainkipatti)

¼ tsp salt

3 cups vegetable stock

½ cup green beans

1 ½ cups chopped cabbage

2/3  cup carrot stripes

2 cloves of grated garlic

½  cup finely chopped onion

1 tbsp smooth tomato paste

1 tsp olive oil

 

METHOD

 

1.     In a large saucepan add a teaspoon of olive oil, sauté the 2/3 cup sliced carrot, onion, and garlic   over low heat until softened, about 5 minutes.

2.     Add vegetable stock and add cabbage, beans, tomato paste, basil (tulsi) , oregano (ajwainkipatti), and salt; bring to a boiling point.

3.     Lower the heat and simmer, covered, about 15 minutes or until beans are softened.

4.     Heat for 3-4 minutes. Sprinkle some fresh coriander and Serve hot.

5.     Makes four 1 cup servings.
